Fruit Salad With Vanilla Ice Cream

This morning I got up at 5 am and went out for a walk with Roco. The best idea I have had for a long time: it was pleasantly “cool” (only 22° C) and I was the only one out and about.

The sun had already started its ascent and the full moon its descent in the West. No traffic apart from the occasional tram or bus, some early risers or late party tigers in their cars.

Roco sniffed each and every bush and I admired the summer flowers at their peak now in all the gardens.

I believe that my body tells me what is good for it and today it told me that it needs ice cream to counterbalance the heat! Maybe it also got confused by my being up early and thought it was already dinner time.

Here we go:

 

Fruit Salad With Vanilla Ice Cream

Serves 2

Ingredients
6 – 8 apricots
6 – 8 strawberries
6 – 8 cherries
2 scoops bourbon vanilla ice cream
salt + pepper
basil leaves
lemon basil leaves
roasted pine nuts

Ice cream glory in the middle of the plate

Arrange the sliced fruit around the vanilla ice cream, decorate with roasted pine nuts and basil leaves and grate some pepper and sea salt over it.

I loved the combination of the fruit with ice cream, roasted pine nuts, the two different basil leaves, salt and pepper. The latter two enhance the aromas of the fruit.

I make sure to drink a lot of water and sugarless ice tea during the day.
